Coconut Chutney Recipe:
I have heard popular chefs talk about health benefits of raw coconut and that we could consume it guilt free in natural form. Every other week, I include coconut chutney in my breakfast menu. Its a quick make recipe
Ingredients:
For Grinding:
1/2 cup coconut
1/4 cup roasted gram
4-5 green chillies
1/2 inch ginger
1 stalk of curry leaf
salt to taste
For Sauting:
1 tsp mustard seeds
2-3 red chillies
2 stalks of curry leaves
Method:
1. Grind all the ingredients – coconut, roasted gram, green chillies, ginger, curry leaves to chutney consistency by adding water in small portion while blending in the mixer. Keep aside
2. Heat 2 tbl spn oil in a pan and add the mustard seeds. As the mustard seeds splutter, add red chillies and curry leaves(keep in low flame while adding curry leaves). Switch of the stove and pour this tempering over the grounded chutney
3. Serve it with idli or dosa.
Variation: Use 5-6 pods of garlic and 1/2 tbl spn sugar instead of ginger
