Kandhar Appam – A chettinad special:
Picking and dropping your kid at school on your own becomes interesting when we form friends network there. I got to know Mohana at Sarah’s preschool and we chat a lot as we walk our kids back home. We sometimes exchange home made snacks. She says that this recipe has been given to her by her aunt and would serve as a quick make snack for kids.
We could use jaggery while she has used white sugar as her kid hates jaggery taste.
Mohana says that her aunt recipe is born out of the traditional chettinad kandhar appam, where people use additional ingredients like coconut, moong dal, channa dal and toor dal.
1/2 cup boiled rice
1/2 cup raw rice
1/6 cup urad dhal
1/2 tspn fenugreek seeds
1/2 cup jaggery or white sugar
Pinch of cardamom powder
Pinch of salt
- Soak boiled rice, raw rice, fenugreek seeds and urad dal together for 2 hrs
- Grind them together in a blender along with jaggery or sugar to dosa batter consistency. Add cardamom powder, salt and mix the batter well. Keep aside
- Heat oil in a deep pan. When the oil is hot enough, using a laddle, pour the batter in the oil. Flip both sides and cook till golden brown on edges
- Serve as evening snack for kids
